&lt;ul&gt;&lt;li&gt;smoked salmon&lt;/li&gt;
&lt;li&gt;salad - couscous w/ roasted veggies, black + kidney beans, corn, diced beets, and carrots w/ balsamic vinegar&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Snack:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;2 dates + some pineapple and canteloupe&lt;/li&gt;
&lt;li&gt;3 rice thins + most of an apple &lt;/li&gt;
